Wuyi (Wuyishan)

Wuyi (Wuyishan) is among the most editorially distinctive tea origins in the world. The dramatic rocky terrain of the Wuyi mountains — towering vertical rock formations, narrow valleys, sparse soil that forces tea plants to root deep into mineral-rich substrate — produces a category of oolong tea unlike anything elsewhere: yancha (岩茶), literally "rock tea." The signature character is yan yun (岩韵), "rock rhyme" — a mineral aftertaste that drinkers learn to recognize as the marker of authentic Wuyi terroir.
Da Hong Pao (Big Red Robe) is the most famous Wuyi yancha; the original four mother trees on a cliff face are protected national treasures, and authentic productions from cuttings of those trees command astronomical prices. Rou Gui (Cinnamon, named for the prominent cinnamon character) and Shui Xian (Water Sprite) are the most widely-produced everyday Wuyi yancha. Production traditions emphasize traditional charcoal roasting that integrates with the underlying tea character over months to years of rest. Wuyi is also the historic origin of Lapsang Souchong, the original smoked black tea, made in the village of Tongmu within the protected Wuyi natural reserve.
