Fuding is the defining Chinese white tea origin. The northeastern Fujian coastal location and the Da Bai (大白, "big white") cultivar produce the long, downy, silver-tipped leaves that become Silver Needle (Bai Hao Yin Zhen, 白毫银针) — among the most delicate and prestigious Chinese teas. Bai Mu Dan (White Peony) uses similar leaf material with more developed leaves and produces a more substantial cup. Shou Mei and Gong Mei are the lower-grade Fuding white teas, often pressed into cakes for aging.
Aged white tea has become a substantial category within Chinese specialty tea over the past 15 years. Properly-stored Fuding white teas develop honeyed, slightly medicinal character over 5-10+ years of aging — a transformation distinct from how green or oolong teas change with time. Pressed white tea cakes from Fuding (similar in format to pu-erh cakes) have become collected items, with pricing for vintage years approaching pu-erh territory.
