Anxi is the home of Tieguanyin (Iron Goddess of Mercy), among the most internationally recognized Chinese oolong teas. The county's mountain terrain, subtropical climate, and four-season harvest cycle produce structurally rich tea material that the Anxi oolong processing tradition transforms into the distinctive Tieguanyin cup character: floral orchid notes, creamy sweetness, and pronounced lingering aftertaste.
Contemporary Tieguanyin is most commonly produced in the "green-style" (清香): lightly oxidized, minimally roasted, emphasizing fresh floral character. The traditional "roasted-style" (浓香) Tieguanyin — heavily roasted over charcoal — has become rarer but produces a deeper, caramelized cup that drinkers seeking traditional Anxi character increasingly seek out. The 2000s-2010s saw substantial commercialization with quality variability; serious Anxi Tieguanyin from skilled producers remains exceptional but requires source-verification.
