Dong Ding (Frozen Peak, 凍頂) is the most editorially important traditional Taiwanese oolong region. Lugu Township in Nantou, in central Taiwan, established the canonical roasted-style oolong that became the template for Taiwanese tea identity in the 20th century. Traditional Dong Ding oolong is mid-oxidation (about 30-40%) and substantially roasted over charcoal, producing the distinctive caramel, honey, and roasted-fruit cup character that defined Taiwanese oolong for decades before the high-mountain unroasted style overtook market attention.
The Lugu Tea Festival, held in Dong Ding, was for decades the most prestigious Taiwanese tea competition. The annual award-winning lots set the regional reference for Dong Ding character and command pricing that reflects the editorial significance. Modern Dong Ding production has bifurcated: traditional roasted-style productions for drinkers seeking the classical Taiwanese character, and lighter modern styles competing with high-mountain unroasted oolongs. Both have legitimate followings.
