Tieguanyin (铁观音, "Iron Goddess of Mercy") is both the name of a specific tea cultivar and the name of the most famous tea produced from it. The cultivar is heirloom Anxi material — there's no documented "developed in year X" date because Tieguanyin cultivation predates modern record-keeping in southern Fujian. Legend ties the name to a tea bush that grew near an iron-clad statue of the Bodhisattva Guanyin; the historical specifics are murky but the cultivar identity is well-established.
Tieguanyin produces what is arguably the most internationally recognized Chinese oolong cup character: floral orchid notes, creamy sweetness, and a distinctive lingering aftertaste (the "yun" 韻 prized in Chinese oolong appreciation). Contemporary production is dominated by green-style (lightly oxidized, minimally roasted) Tieguanyin emphasizing the fresh floral character. Traditional roasted-style Tieguanyin — heavily charcoal-roasted, mid-oxidation — has become rarer but produces a deeper caramelized cup that drinkers seeking traditional Anxi character increasingly seek. The cultivar has also been planted outside Anxi, but international convention reserves the "Tieguanyin" tea name for Anxi-grown material; Tieguanyin grown elsewhere is typically labeled "Anxi-style oolong."
