Huang Shan (Yellow Mountain) is the Anhui mountain range that produces Huang Shan Mao Feng (黄山毛峰, "Yellow Mountain Fur Peak"), one of China's ten famous teas. The mountain's frequent fog and mist, cool nights, and high altitude produce slow-growing tea bushes with concentrated cup character. The "fur peak" name references the downy silver tips that mark the spring harvest. Production is intensively hand-processed: hand-picked buds with one young leaf, withered, then pan-fired carefully to preserve the delicate aromatic character.
Nearby Taiping Houkui (太平猴魁) is another Anhui green tea — produced from large flat leaves with a distinctive elongated appearance, very different from Mao Feng's small downy leaf. Both teas are among the most refined Chinese green teas; both require careful spring sourcing to access genuine production lots. The combination of altitude, mountain climate, and traditional processing produces cup character that lower-altitude or commercially-processed green teas cannot match.
