Junshan (君山, "Lord's Mountain") is a tiny island in Hunan's Dongting Lake — and one of the most prestigious tea-producing locations in China. Junshan Yinzhen (Junshan Silver Needle) is the most famous yellow tea in the world and one of the rarest tea categories overall. Annual production is small; supply has historically been reserved for Chinese government channels and high-end domestic consumption, with limited export.
The yellow tea processing distinguishes Junshan from green tea: after the initial pan-firing, the leaves go through a controlled men huang (闷黄, "sealing yellow") step — wrapped in paper or cloth and held warm for several hours, which produces controlled non-enzymatic oxidation. The resulting cup is mellow, honey-sweet, with a distinctive yellow color (rather than the green of green tea or the brown of black tea). Authentic Junshan Yinzhen at peak quality is among the most refined drinking experiences in Chinese tea; supply has been increasingly constrained as the tea-growing area on the small island is physically limited.
